
The winemaking techniques used by Black Bishop are very simple - minimal intervention winemaking. The most important day in our winemaking process is the picking day, as we believe picking the fruit at the exact right time to be crucial in making wines in our style. All wines are fermented using indigenous yeasts and no other additives are used throughout the process other than minimal sulphur dioxide at bottling. For the production of our wines we use mainly French oak. We believe these methods aid us in producing beautifully balanced, expressive, drinkable wines.
